1canwhole beets, undrained or use fresh cooked beets
1c.cider vinegar
1/3c.sugar
3/4tsp.salt
1/4c.water
8hard-cooked eggs
Instructions
Beets and their liquid should be emptied into a saucepan.
Vinegar, sugar, and salt should be added, and the mixture should be heated until the sugar dissolves.
Allow the mixture to cool to room temperature.
Put the eggs in a medium-size bowl and add the beet mixture; add just enough water so that the liquid covers the eggs.
Cover and marinate for two to three days in the refrigerator.
Notes
Eggs are delicious as an appetizer, as well as sliced on salads for a delicious recipe. A platter of eggs is also a great way to entertain guests. Make a batch and keep it in the refrigerator so you will always have a healthy snack on hand.
