Red Beet Eggs

Amish red beet eggs are a healthy food idea and a delicious appetizer!

Ingredients
  

  • 1 can whole beets, undrained or use fresh cooked beets
  • 1 c. cider vinegar
  • 1/3 c. sugar
  • 3/4 tsp. salt
  • 1/4 c. water
  • 8 hard-cooked eggs

Instructions

  • Beets and their liquid should be emptied into a saucepan.
  • Vinegar, sugar, and salt should be added, and the mixture should be heated until the sugar dissolves.
  • Allow the mixture to cool to room temperature.
  • Put the eggs in a medium-size bowl and add the beet mixture; add just enough water so that the liquid covers the eggs.
  • Cover and marinate for two to three days in the refrigerator.

Notes

Eggs are delicious as an appetizer, as well as sliced on salads for a delicious recipe. A platter of eggs is also a great way to entertain guests. Make a batch and keep it in the refrigerator so you will always have a healthy snack on hand.
